It’s no secret that RVers have a real-life love affair with the pressure cooker or instant pot. The reason for this is because it is multifunctional and does what so many other different appliances do. It saves space and cooks food quickly but my favorite feature by far is that it cooks using electricity, not propane! This is great for saving money when out in the RV. Why use your precious propane when free electricity is most usually included with the price of your campsite? We love to set up a folding table outside next to our outdoor “kitchen” and setting up the pressure cooker with dinner cooking while we play a game of cards or kickball with the kids. Instant pots are essential to RV cooking!

I’m not ashamed to admit that I’ve even brought my instant pot on vacation with me. If you’re staying in a vacation rental remember they do the work of multiple pots and pans and you can provide a budget-friendly meal while traveling with your family. Just eating a few home made dinners on your vacation can save you a lot of money on your overall budget.

Choosing a Pressure Cooker

I love my Instant Pot. We bought a 6-quart model a few years ago and we use it all the time. It is big enough to fit food for our growing family. It works great, it does everything we need it to. Now that we live full-time in our RV we use it even more.

There are many different options of cookers out there and they vary greatly in price. They all basically do the same thing, but costlier versions do have a few more bells and whistles. For us, the pot capacity was the most important deciding factor for us.

Don’t let the price of an Instant Pot be the end all be all for you. There are a lot of other brand pressure cookers out there that are great options too.

We just made these for the first time the other day and we were seriously blown away. There are only three ingredients so it’s extremely budget friendly and FAST. They melted in the mouth and every one of our kids asked for seconds. You can pair with rice or potatoes and a nice salad and you have a meal that took you about 15 minutes or less of prep. You can’t beat that!

Every once in awhile we miss our kitchen back home and just want a good comfort meal. Pot roast always comes to mind and while we don’t want to spend hours letting something cook in our oven just to come out dry, we love to use this recipe for our Instant Pot. My daughter begs for this meal at least once a week. It probably makes it in the rotation at least once a month. It’s creamy, easy, delicious, and filling. For me, potato soup is all about the toppings. A package of pre-cooked bacon crumbles, sour cream, and cheddar cheese will make this meal over the top. It is a little carb heavy especially if you add a side of rolls but it’s a great meal for a Fall day spent outside hiking.

Are there really people out there who don’t like meatloaf and mashed poatoes? I’m sure they exist but definitely not in my house. There is no chance for leftovers when we cook up this combo. I absolutely love that I can make both mealloaf AND mashed potatoes in my Instant Pot. Saves so much propane and it’s quick and easy.
