Part of the challenge of eating a low carb diet is being able to adapt it for other family members who may not need want or need to lose weight.
We have four extremely fit kids who need both carbs and fats to maintain their weight because they are just very active. So when I find or adapt a recipe that the whole family enjoys and it still helps me stay on my meal plan, I call that a big win.
I cooked up this Trim Healthy Mama and Keto approved taco bake for the kids and myself recently on a whim. The kids approved, they all gushed, saying that it was absolutely the best casserole I had ever made. This surprised me because it’s ridiculously easy to throw together. As an added bonus, if you have a cast-iron skillet, it only uses one pan.
Served over some tortilla chips with a side of salad was a fairly well-rounded meal for the the kids. They thought was amazing! I just skipped the tortilla chips and happily was on my Trim Healthy Mama way. This recipe is super adaptable and forgivable, so add more spices, more vegetables, more cheese or whatever you want really!
Low Carb Taco Bake
Ingredients
- 1 pound ground beef
- 4 ounces cream cheese
- 4-5 eggs
- 2 packets low carb taco seasoning
- 1 diced onion
- 1 tbs heavy cream
- 2 cups cheddar cheese
- olives optional
- sour cream optional
Instructions
- In a cast-iron skillet brown ground beef with onion. If you don't have a cast-iron skillet use any skillet you have with a glass dish prepped for transfer.
- In a separate bowl, combine eggs with a splash of heavy cream and whip.
- Add eggs to ground beef and cook thoroughly.
- Once eggs are cooked mix in cream cheese and taco seasoning. Stir to incorporate evenly and let simmer while cream cheese melts.
- Once the mixture is well combined either transfer to an oven-safe casserole dish or stir and flatten casserole so it’s even in the cast iron skillet.
- Top with the desired amount of cheese and if desired sliced black olives.
- Cook in a 350-degree oven until cheese is bubbly roughly 10-15 minutes.
- Serve with optional sour cream or just on its own with a side salad. For the kids and those not watching their carbs, I like to serve tortilla chips with the taco bake.
