Low Carb Taco Bake

Ingredients
  

  • 1 pound ground beef
  • 4 ounces cream cheese
  • 4-5 eggs
  • 2 packets low carb taco seasoning
  • 1 diced onion
  • 1 tbs heavy cream
  • 2 cups cheddar cheese
  • olives optional
  • sour cream optional

Instructions
 

  • In a cast-iron skillet brown ground beef with onion. If you don't have a cast-iron skillet use any skillet you have with a glass dish prepped for transfer.
  • In a separate bowl, combine eggs with a splash of heavy cream and whip.
  • Add eggs to ground beef and cook thoroughly.
  • Once eggs are cooked mix in cream cheese and taco seasoning. Stir to incorporate evenly and let simmer while cream cheese melts.
  • Once the mixture is well combined either transfer to an oven-safe casserole dish or stir and flatten casserole so it’s even in the cast iron skillet.
  • Top with the desired amount of cheese and if desired sliced black olives.
  • Cook in a 350-degree oven until cheese is bubbly roughly 10-15 minutes.
  • Serve with optional sour cream or just on its own with a side salad. For the kids and those not watching their carbs, I like to serve tortilla chips with the taco bake.
