Low Carb Taco Bake

- 1 pound ground beef
- 4 ounces cream cheese
- 4-5 eggs
- 2 packets low carb taco seasoning
- 1 diced onion
- 1 tbs heavy cream
- 2 cups cheddar cheese
- olives optional
- sour cream optional
In a cast-iron skillet brown ground beef with onion. If you don't have a cast-iron skillet use any skillet you have with a glass dish prepped for transfer.
In a separate bowl, combine eggs with a splash of heavy cream and whip.
Add eggs to ground beef and cook thoroughly.
Once eggs are cooked mix in cream cheese and taco seasoning. Stir to incorporate evenly and let simmer while cream cheese melts.
Once the mixture is well combined either transfer to an oven-safe casserole dish or stir and flatten casserole so it’s even in the cast iron skillet.
Top with the desired amount of cheese and if desired sliced black olives.
Cook in a 350-degree oven until cheese is bubbly roughly 10-15 minutes.
Serve with optional sour cream or just on its own with a side salad. For the kids and those not watching their carbs, I like to serve tortilla chips with the taco bake.
